1. Simple Tomato Soup

Ingredients:
  • Riped Tomatoes – 500gms
  • Olive oil – 2tbsp
  • Carrot – 1 (small)
  • Onion – 1 (medium)
  • Celery stick – 1
  • Sugar – a small pinch
  • Bay leaves – 2
  • Tomato puree – 2tbsp
  • Vegetable stock – 1.2liters
  • Black pepper & salt – 1/2tbsp
  • Procedure:

    Now let us start healthy soup preparation by cutting tomatoes, carrot, onion and celery stick roughly of the same size. Add olive oil in a large pan and heat it over a low flame. Now add bay leaves, chopped vegetables, tomato puree, black pepper, sugar, salt and cook it for 5 minutes. Similarly, add 1.2 liters of hot vegetable stock and stir it. Cover it with lid and cook until bubbling starts. Off the flame and allow it to cool. Once it gets cooled shift the mixture into a bowl for blending. Again add the stock to a pan and boil it for 2 minutes. Now the Tomato Soup is ready to serve.

    2. Healthy Chicken Soup

    Ingredients:
    • Chicken – 1kg
    • Celery stick – 2
    • Carrots – 3
    • Onions – 2
    • Water – 8cups
    • Garlic cloves – 4
    • Black pepper – Ā½tbsp
    • Salt -1tbsp
    Procedure:

    Add the freshly cleaned chicken, water and 1 tbsp of salt in a large pan for boiling in a skim foam. Add onions, celery, and garlic cloves to the chicken and cover it with a lid. Allow it to cook for about 20 minutes. Now add carrots, pepper and cook for about 15 minutes. Later transfer the healthy chicken soup recipe to another bowl and serve it.
